Beet and Goat Cheese Latkes (You Have to Eat Sometime)

We’re halfway through Hanukkah: time to switch up your latkes. We recommend beets and goat cheese. A layer of melted goat cheese in the middle makes the texture rich and decadent. My daughter describes them: “Sweet, salty, creamy, crunchy.” To complement the sweet, creamy richness I recommend serving them with a side of crisp green salad.
